Mark Strausman and Susan Littlefield team up to bring Mark’s country Italian cooking to the Hudson Valley, one of the largest and most vibrant family farming communities in America. Their new restaurant, located in Pine Plains, New York, is named Agriturismo, after the Italian concept of agricultural tourism, or farm vacations, where people spend time visiting, and sometimes working, on small family farms.
Agriturismo’s back door opens onto vast farmland, and its menu will feature primarily local produce and meats. “It’s every chef’s dream to have a restaurant in the country surrounded by farmland.” says Mark. “My training in European kitchens allowed for only the best and freshest food to be used. Cooking locally and sustainable wasn’t a marketing strategy, it was just expected.”
Agriturismo will be open in early spring 2010.
